Our Cheesemakers
The Ossola Valleys are home to one of the oldest cheesemaking traditions in the Italian Alps. At Lo Stornello Restaurant, we carefully select artisan cheeses produced in high mountain pastures, where fresh milk is still transformed using traditional methods that preserve its authentic flavour and quality.
Our selection includes Ossola Toma cheeses, Grasso d'Alpe, artisan goat's cheeses, and the renowned Bettelmatt, one of Italy's rarest alpine cheeses, produced exclusively in the high pastures of the Formazza and Upper Ossola Valleys.
We proudly collaborate with local producers such as Formaggi d'Eros, whose passion and craftsmanship help preserve the rich cheesemaking heritage of the Ossola region.
